The Bikini Cocktail

Serves 10 people

For the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Premix (yields 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Method

For the Cordial: Put all the ingredients inside a saucepan, bring to a gentle boil, agitating so the sugar melts. Next, take off the heat and leave to cool fully. Transfer into an sterilised bottle, seal and refrigerate it chilled, where it will keep for about four weeks.

Preparing the Cocktail Base: Pour all the liquid ingredients into one sizeable container, allow it to infuse for an hour, then filter it , ideally through cheesecloth, making it fully clarified.

When ready to serve: Measure 85ml from the cocktail base to a cocktail shaker packed with ice, and agitate lightly for one minute to cool it down. Filter into a frosted cocktail glass or a similar vessel, decorate with the cranberries adding the final touch with a light spray of mandarin oil above the glass.
